Tomato Minty Soup Recipe
Servings 1 person
Ingredients
- 1 cup Red Tomatoes chopped
- 1 cup water
- 6-8 pcs Cashews soaked 3-4 hrs
- 8-10 pcs Mint Leaves
- 3-4 pcs Basil (Tulsi) Leaves
- Black pepper to taste
- Rock Salt to taste
- coriander to garnish
Instructions
- Add water in a pan and bring to boil and turn off the flame.
- Add tomatoes, cashews, basil leaves, mint leaves to the boiled water for 10 mins.
- Blend all the soaked ingredients including along with the water.
- Strain the soup. (Optional)
- Add rock salt, black pepper.
- Garnish with coriander leaves
Notes
You can add tender coconut cream or avocado instead of cashews for creamy consistency.
