Carrot (Gajar) Halwa/Pudding
A very healthy Indian dessert, further improved recipe which takes it to all new level as this is Sugar Free, Fat Free, Dairy Free - and that's what I call Wholesome Awesome Recipe!
An excellent dessert for entire family for winter season, or you can make it anytime as long as you an get fresh carrots from local market - preferably organic produce.

Ingredients
- 1 kg Red Carrots
- 500 ml Almond Milk
- 300 grams Jaggery Powder
- 20 pcs Cashews
- 20 pcs Raisins
- 1 tbsp Cardamom Powder
Instructions
- Wash, peel and grate the carrots
- Add the grated carrots to a deep pan/'khadai'
- Add the almond milk to pan and mix it well
- Let it cook for 20-30 minutes on medium flame and stir it occasionally to ensure the carrots are mixed well with the reducing milk. Cook until the mix is near dry.
- Add the jaggery powder and mix it well, and cook it for another 10 minutes until mix is dry
- Add Raisins, Cardamom Powder, and Cashews and give it a good mix
- Carrot Halwa is ready, serve it hot and enjoy!
